Years of searching, tasting and talking led San Pietro to vineyards sites on the Mornington Peninsula and in the hills of Central Victoria.
With time young vines grew and matured.
A small winery with extra capacity was located on the Mornington Peninsula, and San Pietro was finally free to pursue his craft of fashioning Delicate and Original wines.

San Pietro Produces Pinot Gris, Chardonnay and Pinot Noir from the Cool Climate of the Mornington Peninsula. Shiraz is grown in the Renown Heathcote Region of Central Victoria. All wines are Produced at Mount Eliza.
Each year the new vintage begins with the harvest of the Sparkling wine grapes. Slow fermentation, careful batch selection and blending are the key to this wine. San Pietro's sole focus is to produce the finest fruit-driven sparkling.
Quality fruit and careful handling give this Sparkling Wine a full and balanced palate. The nose is Hay and Melon .The palette is rich and mouth filling with Fresh Fruit . Structure is Elegant and very Easy to Enjoy.
It was foremost in San Pietro's mind to emphasize a distinct Cool Climate style. This wine was already Gris in the vineyard, flavour ripe at 13.5 Baume, a bit of Acid and a Backbone to build a Luscious Palette. A slow cool ferment maximizes fruit expression. Extended time on lees. Special consideration was given to fining to achieve character and length of finish.
A distinctly Cool Climate style. Straw colour with hints of green. The nose invokes Pears, with hints of Violet and Citrus, slightly nutty. The palate displays
Lifted Fruit blended with a Balanced Soft and Full mid palette overlaying an acid spine with hints of Minerality. Great length.
Early in his training, the Versatility of the Chardonnay Grape was revealed to San Pietro. So many Directions to take, but, the grape must choose its Own Path. The vigneron and winemaker must only Gently nudge to achieve Balance.
The Cool Climate of the Mornington Peninsula is expressed wonderfully in this wine. Citrus and Stone Fruit are fleshed out with Malo Notes and broadness of the mid palette finished with a Complex and Delicate Acidity.
San Pietro grows two clones of Pinot Noir on his Mornington Peninsula vineyard. 60% is MV6, the rest 115. Canopy management is vital to ensure air flow and light exposure to the very heart of the vine.
Care in the vineyard is matched in the winery with grapes being fermented slowly with extended skin contact. The winery works day and night, hand plunging the cap of skins back into the fermenting juice. The colour deepens, the perfume rises, and juice becomes wine, made fine and strong with tannins slowly extracted from the skins. Maturation is in selected French barriques, 15% of the oak being new. The wine is hand bottled with minimal filtration, ready to be enjoyed.
San Pietro Pinot Noir punches well above its weight. Intense varietal characters of berry and forest floor. A Full and Round palate Balanced with a fine, almost, CreamyTannin finish. Everything that you would expect from a great Mornington Peninsula Pinot.
Grown on the Terra Rossa soils of the Heathcote Region in Central Victoria. San Pietro Shiraz is fermented in open vats, hand plunged, pumped over and then matured for 24 months in selected mixed forest oak.
The wine has a generous nose of Chocolate, Plum and Spice. The front and mid palates are Full, driven by Complex Fruit and Subtle Oak. The finish is structured around Delicate Tannins. It is soft and long with the promise of creaminess with age.
San Pietro, through a long standing arrangement, shares his Cellar Door and Winery with Underground Winemakers. The Cellar Door is located on the Nepean Highway at Mount Eliza, just before you reach Mornington.
